Fajitas may be a simple dish but that doesn’t mean it has to taste simple. This homemade fajita seasoning blend is better than those store-bought packets by a mile and can even be converted into a marinade. Keep reading for the best fajita seasoning recipe to level up your cooking.

INGREDIENTS:
- 1.5 TBSP Chipotle Chili Powder
- 2 tsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Salt
- 1.5 tsp Smoked Paprika
- 1/4 tsp Dried Oregano
Set the following aside separately:
- 1 tsp Cornstarch
- 1/4 c. Hot water
- Juice of 1 lime
INSTRUCTIONS:
Mix the seasonings together in a small bowl or dish. It will make about 4 tbsp of mix. I prefer to use 2 tbsp per pound of meat, but you can use to your heart’s content. If using 2 tbsp, this will make two servings. Keep the other serving in a jar for next time. Don’t add the cornstarch, water or lime. Those will be used later.

THE TECHNIQUE:
Once you’ve combined the chicken with the peppers and onions, set the burner to low (so it doesn’t burn the seasonings). Add 2 tbsp of seasoning mix and combine evenly. Then, add the juice of 1 lime. Combine the cornstarch with the hot water in a small bowl and add to the fajitas. Stir evenly and raise the heat to medium. Let simmer for an additional 3-5 minutes until the water is reduced and the peppers are done to your liking. The cornstarch slurry allows the seasonings to become a thin sauce and stick to the fajitas better. The lime provides an “oomph” with the acidity to balance out the spiciness of the chili powder.
Is Chipotle Chili Powder Necessary?
Absolutely! It will give the fajitas that spicy kick without the need for cayenne. If you’d prefer a milder flavor, use 1 tbsp chili powder and 1/2 tbsp chipotle chili powder. Once I discovered the magic of chipotle chili powder, I’ve never turned back. It is an absolute flavor upgrade from the regular chili powder. My favorite brand is Morton and Bassett’s chipotle chili powder, however, that one is a little expensive, so the McCormick’s brand is a good substitute.
How To Convert Into A Marinade:
Mix the seasoning mix with 1-2 TBSP of your oil of choice and coat the chicken evenly with the marinade. Add more oil as needed. Let the chicken marinate in the seasonings for at least an hour but overnight is recommended. Cook the chicken as you normally would for fajitas.
